Sogno Wine Jelly
3 cups sugar
2 cups Sogno wine (any wine can be used including port)
3 oz. liquid pectin (Certo brand preferred)

Heat sugar and wine in top of a double boiler
over rapidly boiling water. Stir constantly 
until sugar is dissolved, about 3 minutes. 
Remove from heat, quickly stir in (3oz.) liquid 
pectin.  If foam forms, skim off with a metal spoon.  
Immediately pour jelly into hot, sterilized 
half pint jars leaving 1/4" headspace.  Wipe rims 
of jars, seal with sterilized flat lids and screw bands.  
Process 5 minutes in water bath.  Remove and place 
jars on a towel *away from drafts* and let cool 
completely.  Makes 4 to 5 half pint jars.

***Water Bath:  Can be used to sterilize 
jars and lids as well as process finished jelly 
jars.  Place a wire rack in bottom of a stockpot
or extra large saucepan.  Fill with enough water 
to cover the filled jars, when placed on rack, 
by 1 to 2 inches.  To sterilize jars and lids, 
boil in water bath for 10 minutes.  Jars can stay 
in hot water until they are ready to be filled.  
To process finished jelly, put jars into boiling 
water for 5 minutes.  (Water must boil for the 
entire 5 minutes).
